YOU'LL NEED:
2 cups broccoli florets
1 pound skinned chicken breast, cut into 1-inch chunks
2 teaspoons cornstarch
2 teaspoons of finely chopped ginger
1 cup chicken broth
2 cloves of garlic, finely chopped
3 tablespoons of soy sauce
2 teaspoons of sugar
HOW TO MAKE:
Spray a 12-inch non-stick skillet with cooking spray; heat over medium-high heat. Adding chicken & garlic & ginger. Fry for 2 to 3 minutes or until the chicken is brown.
Add 3/4 cup broth, soy sauce, and sugar. Covering & cooking on medium heat for 6 min, stir twice.
Adding broccoli. Covering & cooking for & min, stirring occasionally, until the color of the chicken disappears from the center and the broccoli is tender and crunchy.
Mix cornstarch with a quarter cup of the remaining broth; Stir with the chicken mixture. Cook, stirring constantly until sauce thickens.
