YOU'LL NEED:

3 medium cucumbers, peeled and thinly sliced
2 medium tomatoes, cut into wedges
1 white onion, sliced


1/2 cup apple cider
1/4 cup extra virgin olive oil
2 tablespoons granulated sugar
1-2 tablespoons fresh parsley, chopped
Kosher salt and freshly ground pepper, to taste

HOW TO MAKE:

In a large bowl, combine cucumbers, tomatoes, and onion. Season liberally with salt and pepper.


Whisk together vinegar, oil, sugar, and parsley, in a glass measuring cup or small container and pour over cucumber mixture. 

Toss to coat and season to taste, if needed.
Cover and chill in refrigerator at least 2 hours. Serve, and enjoy!
